Berbere Braised Lamb Shanks
This is served at Jiko--The Cooking Place, in Disney's Animal Kingdom Lodge at Walt Disney World. This is the oven-baked version. There is also a stovetop version.
Ingredients:
4 lamb shanks, 1 pound each
1.5 teaspoons coarse salt
1 teaspoon freshly ground pepper
2 tablespoons EVOO
Mushroom assortment1
1/2 spanish onion, diced
6 plum tomatoes, cored and quartered
8 garlic cloves, peeled and halved
1 tablespoon flour
Berbere Sauce
Procedures:
1. Preheat oven to 375o
2. Season lamb shanks with salt and pepper.
3. In a large Dutch oven, heat olive oil over medium-high heat. Add lamb shanks and brown on all sides. (May need to do this in two batches.)
4. Remove shanks from pan. Reserve pan and juices. Let lamb cool slightly and coat each shank with Berbere sauce and set aside.
5. In the same pan, add onion, tomatoes, and garlic cloves.
6. Cook over low heat, stirring occasionally, until the tomatoes have softened and the onions are translucent.
7. Add the flour and cook for 1 minute.
8. Add two cups of water to the pan and stir well to combine all ingredients.
9. Return lamb shanks to pan and spoon the tomato mixture over the top of the shanks.
10. Cover pan and place in oven.
11. Cook for 3+ hours, until meat is very tender and beginning to fall off the bone.
12. To serve, place each shank on a plate and top with remaining sauce.
Notes:
2017-10-30: two shanks were served over couscous with butternut squash.
2017-01-27: Two large shanks, with the bones removed before serving, accompanied by 4 bean salad.
2016-12-09: excellent, served with polenta.
2015-10-31: a pair for the two of us. We'll add an 1assortment of mushrooms.
2015-07-03: braised on the stop top with 2 cups of water added. Served with Mashed rutabaga.
2015-03-20: 2 shanks for the two of us with a cup of the sauce sent to the freezer
