Carrots and Cranberries |

This recipe comes from the Crystal Palace at the Magic Kingdom at Walt Disney World. |

Ingredients: |
1 1/3 cups orange juice, divided
3 tablespoons light brown sugar
2 tablespoons butter
2 pounds carrots, peeled and thinly sliced
1 cup fresh cranberries
1/2 teaspoon salt
1/8 teaspoon ground pepper

Procedures: |
Bring 1 cup of the orange juice and the brown sugar to a simmer over medium heat in a 1-qurat saucepan, stirring until the sugar is dissolved.
Whisk together the remaining 1/3 cup orange juice with the cornstarch in a small bowl.
Add cornstarch mixture to the brown sugar mixture and bring to a boil, whisking constantly; cook for 1 minute, or until thickened.
Set aside.
Melt the butter over medium heat in a 12" skillet.
Add the carrots and cook,stirring, about 5 minutes or until crisp tender.
Add the cranberries, salt, and pepper; cook, stirring, for 2 minutes longer.
Add the thickened orange juice mixture, combine thoroughly; cook about 2 minutes, or just until heated through.
Transfer to a serving bowl and serve hot.
