ONION-GRUYÈRE GRATIN

This first came from Southern Living Complete Quick and Easy Cookbook: 2009 |

Ingredients: |
2 Vidalia onions cut into 3/4" slices
2 T EVOO
1/2 cup whipping cream
1 t flour
1/2 t salt
1/8 t ground nutmeg
1 cup Panko Breadcrumbs
1 cup shredded Gruyère cheese

Procedures: |
Place onion slices in a lightly greased oval baking dish in a single layer.
Cover tightly.
Microwave on high for 7 minutes or just until onion is tender.
Repeat the process until all slices have been cooked.
Drain.
Whisk together remaining ingredients.
Spoon the mixture over the onion slices.
Bake at 350o for 20 minutes or until cheese is golden.
Serve immediately.

Notes: |
2020-12-11: made to go with leftover pork shoulder
2018-04-11: The flavor was all in the topping and not in the onion slices there for the onion slices per chance need to be a bit better.
2016-07-25: We used only 2 onions and the result was very good.
2010-06-02: This had its first attempt and was very good. This recipe represent our planned changes.
