MELON VINAIGRETTE  
Ingredients:
1/4 cup Cantaloupe Juice [About 10 oz. of cantaloupe chunks]
1/3 cup Watermelon Juice [About 10 oz. of Watermelon chunks]
Pinch of Coarse Salt
Pinch of Fresh Ground Pepper
1/4 cup Freshly Squeezed Lemon Juice [2 lemons]
1/2 Cup EVOO
1 t Minced Basil
1/4 Cup Cottage Cheese [optional]
Procedures:
1. Juice the cantloupe and watermelon [The boat motor works well.]
2. Whisk in salt, pepper and lemon juice.
3. Whisk in the EVOO and adjust seasoning.
4. Add the cottage cheese and basil.
Notes:
This dressing is part of the Jiko: Cucumber, Tomato and Red Onion Salad
2009-05-03: We made a batch, but left out the cottage cheese.
