Jiko Salad Cucumber, Tomato and Red Onion

Both sweet and salty, with watermelon and cantaloupe juices in the dressing, this is a favorite at
Jiko - the Cooking Place at Disney's Animal Kingdom Lodge.
For many years we have enjoyed the cuisine at Jiko.
Chef-de-cuisine, Anette Gray, has had a lot of influence on our love of braised meat.
This salad, made at the "Cooking Place" is a wonderful signature dish at Jiko.
It is involved, as you can see, but well worth the work.

Ingredients: |
1 Cucumber, Seeded and sliced
1/2 t Coarse Salt
1/2 Red Onion, sliced thinly
2 Roma Tomatoes, sliced thinly
S & P To Taste

1/4 lb. Arugula, rough chopped
1/4 lb. Spinach, rough chopped
1/4 cup Vanilla Dressing
2 T Melon Vinaigrette
2 T Vanilla Dressing

Procedures: |
1. Cut cumber in half, seed, slice fine and place in a stainless steel bowl
2. Add salt, mix well and let sit for 30 minutes.
3. Drain water from cucumber and mix with onions and tomatoes.
4. Add 1/4 cup of Vanilla Dressing and season with S&P.
5. Pack cucumber, tomato and red onion to a 4" diameter 1.5" deep ramekin to mold.
6. Plate and drizzle with 2 T of Melon Vinaigrette.
7. Top with spinach arugula tossed with 2 T of Vanilla Dressing.

2016-08-12: too vinegary. Served with Coquille St Jacque.
2014-08-31: Made to go with shepherds pie
2013-07-14: for us, with spinach, again, not arugula.
2012-01-13: We substituted spinach for the arugula.
2010-12-15: The market had an arugula/spinach blend which worked well.
