PORK MEDALLIONS IN MUSTARD SAUCE  
This original recipe came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
2 Tablespoons Vegetable oil EVOO
2 Tablespoons coarse-grained mustard
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
1.5 pound pork tenderloin
1 teaspoon pepper
Mustard Sauce
Procedures:
  1. ___Stir together first 4 ingredients. Rub mixture over pork, and place in a large zip-top plastic freezer bag. Seal and chill 8 hours, rub pork evenly with 1 teaspoon pepper.
  2. ___Grill, covered with grill lid, over medium-high heat (350o - 400o) for 10 minutes; turn meat, and grill 15 more minutes or until a meat thermometer registers 155o. Slice pork and serve with Mustard Sauce.
  3. ___Roast at 350o until the meat thermometer registers 160o. Slice pork and serve with Mustard Sauce.

Notes:
2010-06-19: This had its first try and was quite good. The Mustard Sauce was rather salty. We'll likely add garlic to the marinade next time.
