GARLIC MASHED POTATOES  
This recipe came, originally, from the Coral Reef Restaurant in the Living Seas pavilion at EPCOT.
Ingredients:
1 pack Instant Mashed Potatoes
1 Tablespoon Minced Garlic or Garlic powder
1 cup Grated Parmesan
1 cup Mayonnaise
4 oz Cream Cheese
1 Tablespoon Butter
Procedures:
Use traditional instant mashed potatoes.
Instead of using the proportions of liquid on the box, heat 1/2 water and 1/2 '1/2 & 1/2' for the required liquid.
Add the cream cheese, mayo and garlic, and boat-motor the mixture.
Add the potato flakes.
Spoon the mixture into a baking dish and top with parmesan cheese.
Drizzle EVOO on the top and then bake at 350o until golden on the top.
Notes:
2011-07-20: Served with it's Saffron Sauce, glazed carrots, and pan-seared salmon.
2010-11-19: Served with it's Saffron Sauce.
