The Hollywood Brown Derby Cobb Salad
The classic Cobb Salad is the most-requested entree at The Hollywood Brown Derby. The story goes that in 1937, owner Bob Cobb and theater magnate Sid Grumman prowled the restaurant's kitchen for a midnight snack, resulting in this salad that Grumman ordered again the next day. It became an overnight sensation. At the WDW Hollywood Studios Brown Derby, at lunch, this is served as an entree and easily serves two. At dinner, the same portion is a side salad!
This is our version with the prescribed dressing. Here is the current version.
Ingredients: all finely chopped
2+ cups Romaine lettuce
1 cup Chicory leaves
.5 lb deli turkey
.5 lb Tavern ham
2-3 plum tomatoes
1 avocado
.5 cup blue cheese
6 strips crumbled bacon
3 hard cooked eggs
2 T fresh chives
Dressing [This is the prescribed dressing. We use Good Season's Italian]
2 T Water
2 T Red Wine Vinegar
1 T lemon juice
.5 t Worcestershire
.5 t salt
1 T minced garlic
.25 t sugar
.25 t ground pepper
.25 t dried mustard
1/3 cup canola oil
2 T olive oil
Procedures:
For the prescribed dressing, whisk together the water, red wine vinegar, lemon juice, Worcestershire, salt, garlic, sugar, pepper, and dry mustard.
Whisking, add the vegetable oil and olive oil.
Chill until ready to serve.
For the salad, chop/dice everything else and refrigerate in individual containers, saving the avocado for last. To finish, add all the ingredients to a large bowl and toss well. The dressing can be added to the bowl or to individual servings.
2012-07-15: I used the food processor for the ingredients and that was a mistake for Romaine as it was liquified!
2012-04-28: The market didn't have chicory/endive, so we substituted green leaf lettuce. I added the blue cheese after Margaret's portion had been plated.
2011-07-09: I finely chopped into individual Ziploc containers, again, but this time assembled all the ingredients together. Alas, the avocado was not ready. We served this with corn muffins. As before, we served with Good Season's Italian.
2010-07-21: I cut the ingredients into separate Ziploc containers and then assembled each salad to order, including only the desired ingredients. There were no chives. We served it with Parmesan Crisps.
If leftovers are expected, only add the avocado when served, as it browns quickly.
2009-10-21: We left out the eggs and avocado, but it's better with them. We also had fried oysters.
2009-05-17: Tonight we served this with oyster stew.
