This first came from Good Eats, by Alton Brown. We, of course, have made changes.
Ingredients:
2 cups water
1 cup cider vinegar
1 cup red wine vinegar
1 medium onion, chopped
1 large carrot, chopped
1 tablespoon plus one teaspoon kosher salt
1/2 teaspoon black pepper
2 bay leaves
6 whole cloves
2 ounces of gin
1 teaspoon mustard seed
1 3.5 - 4 lb bottom round
1 tablespoon EVOO
1/3 cup sugar
5 ounces ginger snaps, crushed
Procedures:
Combine the water, vinegars, onion, carrot, salt, pepper, bay leaves, cloves, gin and mustard in a large saucepan over high heat. Cover and bring to a boil then lower the heat and simmer for 10 minutes. Set aside to cool.
Pat the bottom round dry, then rub it with oil and salt on all sides. Heat a large sauté pan over high heat, add the meat and brown on all sides. When the marinade is cool to the touch, place the meat in a nonreactive vessel (a 4 qt stainless-steel pan with a lid is ideal) and pour the marinade over it. Refrigerate for 3 days. If the meat is not completely submerged in the liquid, turn it over once a day.
Heat the oven to 325o. Add the sugar to the meat and marinade, cover, and cook on the middle rack of the oven until tender, about 4 hours. Remove the meat from the vessel and keep warm. Strain the liquid to remove the solids. Return the liquid to the pan and place over medium-high heat. Whisk in the gingersnaps and cook until the sauce has thickened, stirring occasionally. Strain the sauce to remove any lumps. Add the raisins , if desired. Slice the meat and serve with the sauce.

2010-10-15: We made a German dinner which included Frosted Cauliflower and German Potato Salad.
